Veal Spiedine at Cassanova Grill

Bush and Grimley are the "new management" at Casanova Grill in Marlton. Veal Spiedine

1/2 large, sweet onion
1/4 cup olive oil
1/2 cup fresh bread crumbs browned in oven
1/3 cup grated Parmigiano cheese
1 garlic clove
Salt and pepper (to taste)
1 large Granny Smith apple
1/2 pound veal scaloppini, 1/8 inch thick (pound thin)
4 ounces goat cheese Unsalted butter

Method:
Slice onion and one apple. Over medium-high heat, brown sliced onion and sliced apples in 3 tbsp. olive oil. Cook until onions are caramelized. In a large bowl, mix cooked onion and apples with bread crumbs, Parmigiano cheese and garlic. Season to taste with salt and pepper. Put 1 tbsp. of mixture and 1/2 tsp. goat cheese at the end of the veal scallopini. Roll veal. Seal with a toothpick. Place veal on oiled pan that goes under the broiler. Place 1/4 pat of butter (more or less to taste) on top of each roll. Cook until brown on both sides, turning once. Garnish with fresh sliced apples on top. (Optional).
