Clams Casino
Serves 4-6

12 medium-sized clams, shucked
12 strips bacon, diced
1 red bell pepper, diced
1 green pepper, diced |
1 large onion, diced
1 cup butter
1 tsp thyme

Method:

In a large pan, sauté the onions, peppers and bacon in the butter over medium heat until tender. Once cooked, add the thyme seasoning and mix well.
Stuff each clam with the mixture and place on a baking sheet. Broil in the oven for 8-10 minutes or until crispy. Best served with garlic toast and lemon wedges.
